Obviously invented by a sailor, the spiral freezer and cooling system operates on the capstan or winch principal. Webster defines a capstan as “a revolving cylinder for hoisting weights by winding in a cable.” The spiral freezer operates in the same fashion, requiring small radius conveyor belts and low-tension belt systems. The belts must have the lateral ability to turn in both directions. Thus, a continuous mesh wire belt system can be coiled into a fixed diameter helix or multitiered spiral.
