Description

Transpiration coefficients for 17 common fruits and vegetables were measured both under still air conditions and under forced-air conditions. They were measured at different airflow rates and relative humidities to study the effects of these parameters on the transpiration coefficients. When the overall transpiration coefficient is divided into two components, a coefficient Ks due to the skin resistance of the product, and a coefficient Ka due to the resistance of the air film surrounding the product surface, it was found that while Ka varies with the airflow rate, Ks was independent of the airflow rate or the air relative humidity for most of the products tested.
